Mango Pineapple Salsa

Tacos and burrito bowls are a staple in my life. I’m usually weary of salsas because they can sometimes be way too under seasoned, its basically just tomatoes in their own juices and who wants that. I wanted to make something that would take my burrito bowls to the next level. Adding a scoop of this on top adds a sweetness to the dish I didn’t know it needed.

Ingredients

  • 1 large Tomato, diced

  • 1/2 cup Mango, diced

  • 1/2 cup Pineapple, diced

  • 1/2 cup Cilantro, roughly diced

  • 1/4 cup Red Onion, finely diced

  • 2 Limes, juiced

  • 1 Jalapeno, finely died with the seeds removed

  • Salt, to taste

Directions

  1. Roughly dice tomatoes, mango, pineapple and cilantro (I know cilantro is controversial but trust me it is perfect in this recipe)

  2. Finely dice jalapeño and red onion. Remove the seeds from the jalapeno if you want a more mild salsa, if you want it to have more of a kick leave some of the seeds in

  3. Add ingredients to a bowl and mix with lime juice and salt to taste

  4. Serve with tortilla chips or on top of a taco and enjoy

This has become one of the go to things I make when we have people over or get invited somewhere. It’s so simple to make but is always impressive when you put it out. It’s delicious, simple and colourful. Pairing it with some store bought tortilla chips is a crowd pleaser, but if you really want to impress fry up some home made tortilla chips to serve alongside.
